Cheese Baked Rice With Minced Beef and Spinach

Preparation (Serve 3):

2 cups of uncooked New Moon Thai Hom Mali Organic Rice

1 tablespoon of organic extra virgin avocado oil

2 cloves of garlic and 1 onion finely chopped

300g of minced beef

250g of tomato paste

480ml of water

2 tablespoons of coconut sugar

2 tablespoons of Italian herbs

2 teaspoons of chili powder

a pinch of chili flakes

a pinch of Himalayan pink salt

2 stalks of Italian parsley leaves

2 cups of baby spinach

250g of grated mozzarella cheese

 

Cooking Instructions:

  1. Steam 2 cups of New Moon Thai Hom Mali Organic Rice (45 minutes)
  
  2. Heat up 1 tablespoon of organic extra virgin avocado oil
  
  3. Stir-fry 2 cloves of garlic and 1 onion (finely chopped)
  
  4. Stir-fry 300g of minced beef
  
  5. Add 250g of tomato paste into the pot and mix well
  
  6. Pour 480ml of water into the pot and mix well
  
  7. Add and mix: 
        
       a) 2 tablespoon of coconut sugar
        
       b) 2 tablespoon of Italian Herbs
        
       c) 2 teaspoon of chili powder
        
       d) a pinch of chili flakes
        
       e) a pinch of Himalayan pink salt
  
  8. Crack 2 organic eggs into the pot and mix
  
  9. Mix cooked rice into the pot until sauce fully covers all the rice

10. Spread all the rice from the pot onto the baking tray evenly

11. Add 2 stalks of Italian parsley leaves and 2 cups of baby spinach on the rice

12. Evenly spread 250g of grated mozzarella cheese on top

13. Bake in the oven at 190℃ for 15 minutes

14. Slice baked rice into 8 equal parts with a pizza wheel

15. Ready to serve





CURRY CHICKEN

Synopsis:

If your definition of comfort food is chicken curry with rice then look no further and try this quick and easy to make in 30 minutes! ;-)

 

Preparation (Serve 4-6):

600g chicken meat

1 packet New Moon Chicken Curry Paste

250g potato (peeled and cubed) 

800ml water

200ml coconut milk / yoghurt / fresh milk (Optional)

 

Cooking Instructions:

1. Mix New Moon Chicken Curry Paste with 800ml of water in the pot.

2. Put in 250g of potato (peeled and cubed)

3. Put in 600g of chicken meat in pot

4. Boil for approximately 25 minutes until cooked.

5. Add in 200ml of coconut milk and mix well.

6. Ready to serve.
